  1. Pre-heat the oven to 180°F/350°F/gas mark 4
  2. Heat the oil in a large pan or oven proof casserole dish over a medium heat and fry the sausages for 4 - 5 minutes until they have some colour.
  3. Add the onion and fry for 3 minutes, then add the garlic and sage and fry for a further 3 minutes, whilst stirring.
  4. Stir in the pumpkin and flour then add the tomato puree, honey, dijon mustard worcestershire sauce, cannellini beans, tinned tomatoes and stock. Season and bring to the boil.
  5. Wash the potatoes and prick the skins with a fork then place on a baking tray in the oven.
  6. Cover the casserole dish and bake in the oven for about 1 hour. Sprinkle with the chopped parsley and serve with the baked potatoes.
