Lockdown Store Cupboard Favourites

Lockdown poses many challenges! One of them is how many meals can you cook just using store cupboard ingredients. These are my top 5 handy recipes. Remember, you are allowed to improvise with what you have, so if the only beans you have are baked beans, they will do! Stay Safe everyone.

Chickpea and Lentil Curry is a favourite even when we are not in lockdown. If you don’t have fresh lemons, use bottled lemon juice.

This vegetarian curry is a favourite amongst many meat eaters! Chickpeas and lentils are traditional curry ingredients and this recipe is a great store cupboard favourite.

Bean Goulash is another top recipe and also uber healthy. Use whatever beans you have available.

Bean Goulash
This is a simple version of a Hungarian Bean Goulash. Serve it with crusty bread or rice if you are pushed for time, but if not, it’s lovely with baked potato. It can be prepared in advance and kept in the fridge for 2 days. It also freezes well. If you are cooking it for freezing, just stir in the beans but don’t cook them any further as freezing softens the beans slightly. Just de-frost and re-heat the dish when you are ready.

Prawn & Pea Risotto is handy as the prawns and peas are both freezer items making this a great choice if you can’t get out.

Prawn and Pea Risotto
Prawns make a wonderful summery risotto and the peas add sweetness. Risotto can sometimes be hard to do when you have lots of distractions, so in this version, there is minimal stirring. It still tastes great, but you get some breathing space.

Tuna Pasta Bake is a classic and tinned tuna lasts ages. I’ve used tinned tomatoes as the sauce here as it’s easy. This is one of the recipes I always use if the kids have been off sick and I haven’t been able to get out.

Tuna Pasta Bake
A family favourite. Tuna pasta bake is great as it uses ‘store cupboard ingredients’ which is a nicer way of saying tins and packets. Very useful if your kids have been off sick and you’ve not been able to leave the house. This version uses a tomato base rather than a white sauce base, because it’s quicker, which is why I like it. It can be prepared in advance and kept covered in the fridge for up to 48 hours.

Tomato and Basil Risotto with Poached Egg. Although this obviously tastes better with fresh basil, you can use dried for that extra flavour. The egg is a good source of protein.

If you’ve never cooked a risotto before, this one is for you. It’s very easy to do and you don’t have to stand over it stirring all the time. The poached egg is a lovely addition to this meal and provides protein.
